Grilled Duck Breast with Cherry Reduction
Crisp-skinned grilled duck breasts served with a glossy, sweet-tart cherry and red wine reduction.
Instructions

Step 1
Pat the duck breasts dry. Score the skin in a shallow crosshatch pattern, then season the duck with 1 tsp (6 gr) salt and the black pepper.

Prepare the grill with medium heat on one side and no direct heat on the other. Clean the grate and close the lid to preheat.

Melt half the butter in the saucepan over medium heat. Add the shallots and cook until softened without browning.

Add the cherries, wine, stock, balsamic vinegar, sugar, thyme, and the remaining ¼ tsp (2 gr) salt. Bring to a boil over high heat, then reduce to medium heat and simmer until syrupy and reduced by about half.

Place the duck skin-side down over medium heat. Grill with the lid closed until the skin is browned and much of the fat has rendered.

Turn the duck and continue grilling, moving it to the unheated side as needed, until the thickest part reaches 74°C.

Transfer the duck to a platter and rest before slicing.

Remove the thyme from the cherry reduction. Take the saucepan off the heat and stir in the remaining butter until the sauce is glossy.

Slice the rested duck breasts and serve with the warm cherry reduction spooned over them.
