Beef Bourguignon
A classic French stew of beef slowly braised in red wine with bacon, carrots, mushrooms, and pearl onions.

Step 1
Preheat the oven to 160°C.

Pat the beef dry, then toss it with the salt and black pepper.

Cook the bacon in the Dutch oven over medium heat until browned and its fat has rendered. Transfer it to a clean plate.

Add the vegetable oil and raise the heat to high. Sear the seasoned beef in uncrowded batches, browning each batch on all sides, then transfer it to a separate plate.

Lower to medium heat. Add the carrots and yellow onion and cook until the onion begins to soften.

Add the garlic and tomato paste. Cook, stirring, until fragrant and the paste darkens slightly.

Sprinkle in the flour and stir until it evenly coats the vegetables.

Pour in the red wine, scraping the bottom of the pot. Simmer over medium heat until the liquid is slightly reduced.

Add the beef stock, thyme, bay leaves, cooked bacon, and seared beef. Bring the liquid to a gentle simmer over medium heat.

Cover the Dutch oven and braise in the oven.

While the beef braises, melt half the butter in the skillet over medium heat. Sauté the mushrooms until browned and transfer them to a plate.

Melt the remaining butter in the skillet over medium heat. Cook the pearl onions until lightly browned and beginning to soften.

Stir the mushrooms and pearl onions into the stew. Cover and continue braising at 160°C until the beef is fork-tender and has reached at least 71°C internally.

Remove the thyme stems and bay leaves. Rest the stew briefly, skim excess fat if desired, and finish with the parsley before serving.
