Greek Lemon Potatoes

Instructions

    Heat the oven to 200°C.

    Peel the potatoes, cut them lengthwise into thick wedges, and arrange them in a single layer in the roasting dish.

    Whisk the olive oil, lemon juice, chicken broth, garlic, oregano, salt, and black pepper together in the mixing bowl.

    Ingredients used: 360.0 ml Chicken Broth, 3.0 gr Dried Oregano, 60.0 ml Extra Virgin Olive Oil, 12.0 gr Garlic, 1.0 gr Ground Black Pepper, 60.0 ml Lemon Juice, 6.0 gr Salt

  4. Step 4

    Pour the lemon mixture over the potatoes and turn the wedges until evenly coated.

  5. Step 5

    Roast uncovered at 200°C until the potatoes begin to soften and color at the edges.

    Timer: 40 min (fixed)

    Turn the wedges and return the dish to the oven until the potatoes are deeply golden, tender throughout, and coated in the reduced lemon juices.

    Rest the potatoes for 5 minutes, then turn them through the pan juices and serve warm.
