Gigantes Plaki Baked Beans
Greek-style giant white beans baked until creamy in a rich tomato, olive oil, vegetable, and herb sauce.
Instructions

Step 1
Place the beans in a large bowl with 8 cup (2000 ml) water. Cover and soak in the refrigerator for 8 hours or overnight.

Drain the soaked beans in a colander and rinse them well.

Transfer the beans to a large pot. Add the remaining 8 cup (2000 ml) water and the bay leaves, then bring to a full boil over high heat. Boil for 10 minutes, reduce to low heat, and simmer until nearly tender.

Drain the beans, reserving 300 ml of their cooking liquid. Discard the bay leaves.

Preheat the oven to 180°C.

Heat 4 tbsp (60 ml) olive oil in a large skillet over medium heat. Add the onion, carrot, and celery and cook until softened.

Add the garlic, oregano, and red pepper flakes. Stir over medium heat until fragrant.

Stir in the tomato paste, crushed tomato, salt, and black pepper. Simmer over low heat until slightly thickened.

Remove the sauce from the heat and stir in the parsley and dill.

Spread the beans in a large baking dish. Fold in the tomato sauce and the reserved cooking liquid.

Bake uncovered at 180°C until the beans are completely tender and the sauce is thick around the edges.

Drizzle the remaining 2 tbsp (30 ml) olive oil over the beans and let them rest before serving.
