Fideuà de Marisco
A Spanish seafood dish of toasted short noodles simmered in saffron-scented fish stock with shrimp, squid, and mussels.

Step 1
Combine the fish stock and saffron in a saucepan. Bring just to a simmer over medium heat, then keep warm over low heat.

Heat 2 tbsp (30 ml) olive oil in the paella pan over medium heat. Add the shrimp and squid and sauté briefly, turning once, then transfer them to a plate.

Add the remaining 2 tbsp (30 ml) olive oil and the garlic to the pan; cook over medium heat for 30 seconds. Stir in the smoked paprika and grated tomato, then cook until the tomato thickens.

Add the noodles and stir over medium heat until evenly coated and lightly toasted.

Pour the warm saffron stock into the pan and add the salt. Spread the noodles evenly, bring to a simmer over medium heat, and cook without stirring.

Return the shrimp and squid to the pan and arrange the mussels among the noodles. Continue simmering over medium heat until the noodles are tender, the liquid is absorbed, and the mussels have opened.

Raise to high heat for 1 minute to lightly crisp the bottom, then remove the pan from the heat and let the fideuà rest uncovered.

Scatter the parsley over the fideuà and serve with the lemon wedges.
