Falafel Balls
Crisp Middle Eastern falafel made from soaked dried chickpeas, fresh herbs, garlic, and warm spices, then fried until golden.
Instructions

Step 1
Place the chickpeas in a large bowl, cover with the cold water, and refrigerate for at least 12 hours and up to 18 hours.

Drain the soaked chickpeas thoroughly in a colander and shake off excess moisture.

Combine the drained chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, salt, black pepper, and cayenne in a food processor. Pulse until finely minced and cohesive but still slightly coarse.

Transfer the mixture to the large bowl, cover, and refrigerate for 30 minutes.

Fold the baking powder and sesame seeds evenly into the chilled mixture.

Shape the mixture into 20 compact balls about 3 cm wide and place them on a plate.

Pour the vegetable oil into a deep pot and heat over medium heat until it reaches 175°C.

Fry the falafel in small batches, turning occasionally, until deep golden and cooked through, about 4 minutes per batch. Maintain the oil near 175°C.

Lift the falafel from the oil with a slotted spoon, drain briefly, and serve hot.
