Date-Sweetened Cocoa Oat Cake

A tender cocoa cake made with blended dates, milk, eggs, and oat flour, without an optional topping.

Instructions

  1. Step 1

    Preheat the oven to 180°C. Line the base and sides of a 20 cm round cake pan with parchment paper.

  2. Step 2

    Heat the milk in a small saucepan over medium heat until steaming and about 70°C, without letting it boil.

    Place the dates in a mixing bowl, pour the hot milk over them, and soak until softened.

    Blend the dates and milk until the mixture is smooth and no large pieces remain.

  5. Step 5

    Whisk the eggs into the date mixture until evenly combined.

  6. Step 6

    In a second bowl, whisk together the oat flour, cocoa powder, and baking powder, breaking up any cocoa lumps.

  7. Step 7

    Fold the dry mixture into the date mixture just until no dry pockets remain.

  8. Step 8

    Transfer the batter to the prepared pan and level the surface.

  9. Step 9

    Bake on the center rack for 35 minutes, then test the center. If wet batter remains, bake for up to 5 minutes more; the cake is ready when a tester comes out with only moist crumbs.

  10. Step 10

    Cool the cake in the pan for 10 minutes, then transfer it to a wire rack and cool for at least 15 minutes before slicing.
