Curried Vegetable Quinoa
A warmly spiced one-pot quinoa dish with cauliflower, peppers, tomatoes, peas, and fresh lemon and coriander.
Instructions

Step 1
Rinse the quinoa thoroughly under cool running water in a fine-mesh strainer, then drain well.

Heat the vegetable oil in a large saucepan over medium heat. Add the onion and carrot and cook, stirring occasionally, until beginning to soften.

Add the bell pepper and cauliflower. Cook over medium heat, stirring occasionally, until the vegetables begin to color.

Stir in the garlic, curry powder, and turmeric. Cook over medium heat until fragrant.

Stir in the rinsed quinoa, tomato, vegetable broth, and salt. Bring to a boil over high heat, then cover and reduce to low heat.

Simmer covered on low heat until the quinoa is tender and most of the liquid has been absorbed.

Stir in the green peas, cover, and cook on low heat until the peas are hot and the remaining liquid is absorbed.

Remove the saucepan from the heat. Stir in the lemon juice, coriander leaf, and black pepper, then let the quinoa stand covered before fluffing and serving.
