Curried Lentils with Spinach

Instructions

Step 1
Rinse the red lentils in a colander under cool running water until the water is mostly clear, then drain well.

Heat the vegetable oil in a large saucepan over medium heat. Add the cumin seeds and cook until fragrant.

Add the onion and cook over medium heat, stirring occasionally, until softened and lightly golden.

Stir in the garlic and ginger and cook until aromatic.

Add the curry powder, turmeric, and red chili pepper. Stir continuously until the spices are fragrant.

Stir in the tomato and salt. Cook over medium heat until the tomato softens and forms a thick sauce.

Add the rinsed lentils and water. Stir, increase to high heat, and bring to a boil.
