Crustless Spinach Quiche

A savory, crust-free egg custard filled with sautéed spinach, onion, garlic, and Gruyère cheese.

Instructions

  1. Step 1

    Heat the oven to 180°C. Grease the pie dish with the butter.

    Heat the olive oil in the skillet over medium heat. Add the onion and cook until softened.

    Timer: 5 min (fixed)

    Ingredients used: 15.0 ml Olive Oil, 1.0 piece Onion

  3. Step 3

    Add the garlic and spinach. Cook over medium heat until the spinach has wilted and excess liquid has evaporated, then remove from the heat and cool briefly.

    Timer: 5 min (fixed)

    Ingredients used: 8.0 gr Garlic, 300.0 gr Spinach

  4. Step 4

    Whisk the eggs, whole milk, heavy cream, salt, black pepper, and nutmeg until evenly combined.

    Ingredients used: 6.0 piece Egg, 1.0 gr Ground Black Pepper, 0.25 gr Ground Nutmeg, 120.0 ml Heavy Cream, 4.0 gr Salt, 240.0 ml Whole Milk

    Cookware: mixing bowl, whisk

  5. Step 5

    Fold the cooled spinach mixture and Gruyère into the egg mixture, then pour it into the prepared pie dish.

    Ingredients used: 120.0 gr Gruyere Cheese

  6. Step 6

    Bake at 180°C until the center is just set and reaches at least 71°C.

    Timer: 35 min (fixed)

    Rest the quiche before slicing and serving.
