Crispy Sesame Tahini Cookies
Thin, crisp cookies with rich tahini, golden edges, and a crunchy sesame coating. Makes about 24 cookies, or 12 servings of 2 cookies each.

Preheat the oven to 175°C and line two baking sheets with parchment paper.

Whisk the flour, baking soda, and salt together in a mixing bowl.

Beat the softened butter and sugar in a separate bowl until evenly blended and slightly fluffy.

Beat the tahini into the butter mixture until smooth.

Add the egg and vanilla, then beat until fully incorporated.

Fold the prepared dry mixture into the wet mixture just until no streaks of flour remain.

Cover and refrigerate the dough until firm enough to shape.

Place the sesame seeds in a bowl. Divide the dough into 24 equal portions, roll each into a ball, coat with sesame seeds, and arrange well apart on the prepared baking sheets; flatten each ball into a disc about 6 mm thick.

Bake one sheet at a time at 175°C until the cookies are golden around the edges and dry on top.

Let each batch rest on its baking sheet to firm up before transferring the cookies to a wire rack.
