Creamy Mushroom Ragout with Pan-Fried Vegan Maultaschen
Golden pan-fried vegan Maultaschen served with a savory cremini mushroom ragout finished with soy cream and fresh parsley.
Instructions
-
Step 1
Slice the mushrooms and finely dice the onion.
-
Step 2
Heat 15 ml of the oil in the large frying pan over medium heat. Add the diced onion and cook until soft and lightly golden.
-
Step 3
Add the sliced mushrooms and cook over high heat until their released moisture evaporates and the edges brown. Stir in the salt and black pepper.
-
Step 4
Whisk the cornstarch with the cold water until completely smooth.
-
Step 5
Pour the vegetable broth and soy cream into the mushrooms. Bring the sauce to a gentle simmer over medium heat.
-
Step 6
Stir the cornstarch slurry into the simmering sauce. Reduce to low heat and cook, stirring, until the ragout lightly coats the spoon.
-
Step 7
Heat the remaining 15 ml oil in the second frying pan over medium heat. Add the Maultaschen and fry, turning occasionally, until golden on both sides and hot through.
-
Step 8
Finely chop the parsley.
-
Step 9
Stir the chopped parsley into the mushroom ragout over low heat, then remove the pan from the heat.
-
Step 10
Cut the fried Maultaschen into halves or thick strips and serve them with the creamy mushroom ragout.
