Couscous with Seven Vegetables
A traditional Moroccan-style main course of fluffy couscous served with tender lamb, chickpeas, and a fragrant broth containing onion, tomato, carrot, turnip, cabbage, pumpkin, and zucchini.
Instructions

Step 1
Heat the olive oil in the stockpot over medium heat. Add the lamb and brown it on several sides.

Add the onion, ground ginger, turmeric, cinnamon, black pepper, and salt. Cook over medium heat until the onion begins to soften.

Stir in the tomato, then add the water, chickpeas, parsley, and cilantro. Bring to a boil, cover, reduce to low heat, and simmer.

Add the carrots, turnips, and cabbage. Cover and continue simmering over low heat.

Add the pumpkin and simmer, covered, over low heat.

Add the zucchini and continue simmering until all the vegetables are tender and the lamb is fork-tender and at least 74°C at its center. Remove the herb bundles.

Place the couscous in the heatproof bowl. Ladle about 600 ml of hot broth from the pot over it, cover, and let it stand until the broth is absorbed.

Add the butter to the couscous and separate the grains gently with a fork.

Spread the couscous on the serving platter. Arrange the lamb and seven vegetables over it, add the chickpeas, and spoon broth around the couscous before serving.
