Cobb Salad with Blue Cheese
A classic American composed salad with chicken, crisp bacon, hard-cooked eggs, avocado, tomatoes, and crumbled blue cheese, finished with a red wine vinaigrette.
Instructions

Step 1
Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil over high heat.

Remove the saucepan from the heat, cover it, and let the eggs stand in the hot water.

Drain the eggs and cool them under cold running water. Peel and quarter them, then set aside.

Season the chicken with ⅜ tsp (2 gr) salt and 1 gr black pepper. Heat 1 tbsp (15 ml) olive oil in a skillet over medium heat, then cook the chicken for 5–7 minutes per side until its thickest part reaches 74°C.

Transfer the chicken to a clean cutting board and let it rest, then slice it across the grain.

Cook the bacon in the skillet over medium heat until crisp. Transfer it to cool briefly, then crumble it.

Spread the romaine over a serving platter. Arrange the tomatoes and avocado over the lettuce.

Whisk 5 tbsp (75 ml) olive oil with the red wine vinegar, Dijon mustard, ⅝ tsp (4 gr) salt, and 1 gr black pepper until emulsified.

Arrange the sliced chicken, quartered eggs, bacon, blue cheese, and chives in rows over the salad.

Drizzle the vinaigrette over the salad just before serving, or serve it alongside.
