Chickpea Stew With Spinach

A hearty tomato-based chickpea stew flavored with cumin, smoked paprika, garlic, and lemon, with tender spinach stirred in at the end.

    Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and ⅜ tsp (2 gr) salt, then cook until the vegetables soften.

  2. Step 2

    Add the garlic, cumin, smoked paprika, red pepper flakes, and tomato paste. Stir over medium heat until fragrant and the tomato paste darkens slightly.

    Stir in the tomatoes, chickpeas, vegetable stock, black pepper, and ⅝ tsp (4 gr) salt. Increase to high heat and bring the stew to a boil.
