A fresh Mediterranean-style salad of chickpeas, baby spinach, crisp vegetables, feta, and lemon-garlic dressing.

Instructions

  1. Step 1

    Rinse the chickpeas under cool running water, then drain them thoroughly.

    Wash the spinach, tomatoes, cucumber, and parsley under cool running water, then dry them thoroughly.

    Ingredients used: 250.0 gr Cherry Tomato, 200.0 gr Cucumber, 20.0 gr Parsley, 150.0 gr Spinach

  3. Step 3

    Halve the tomatoes, dice the cucumber, thinly slice the red onion, and chop the parsley.

  4. Step 4

    Whisk the olive oil, lemon juice, garlic, Dijon mustard, honey, salt, and black pepper until emulsified.

    Ingredients used: 10.0 gr Dijon Mustard, 60.0 ml Extra Virgin Olive Oil, 6.0 gr Garlic, 1.0 gr Ground Black Pepper, 10.0 gr Honey, 45.0 ml Lemon Juice, 4.0 gr Salt

  5. Step 5

    Place the prepared chickpeas, spinach, tomatoes, cucumber, red onion, and parsley in the large mixing bowl. Add the feta and pour over the dressing.

    Toss gently until everything is evenly coated, then serve immediately.
