Chicken with Olives and Preserved Lemon
A Moroccan-style braise of browned chicken thighs with aromatic spices, green olives, preserved lemon, and fresh herbs.

Step 1
Season the chicken thighs evenly with the salt and black pepper.

Heat the olive oil in the heavy pot over medium heat. Brown the seasoned chicken in batches, skin-side down first, then transfer it to a clean plate.

Add the onions to the pot and cook over medium heat, stirring occasionally, until softened and lightly golden.

Add the garlic, ginger, turmeric, cumin, and saffron. Stir over medium heat until fragrant.

Pour in the water and scrape up the browned residue. Return the chicken and its collected juices to the pot, bring to a gentle simmer over medium heat, then cover and cook over low heat.

Add the olives and preserved lemon. Cook uncovered over low heat until the sauce is slightly reduced and the chicken reaches 74°C internally.

Remove the pot from the heat, stir in the parsley and cilantro, and let the chicken rest briefly before serving.
