Chicken Parmesan
Crisp breaded chicken breasts topped with tomato sauce, mozzarella, and Parmesan, then baked until bubbling and golden.

Step 1
Preheat the oven to 220°C and place a baking dish nearby.

Place the chicken breasts on a cutting board, cover them with baking parchment, and pound them to an even 1.25 cm thickness. Season both sides with the salt and black pepper.

Put the flour in one shallow bowl and beat the eggs in a second. In a third bowl, combine the breadcrumbs, 30 gr Parmesan, Italian seasoning, and garlic powder.

Coat each chicken breast in flour, dip it in beaten egg, and press it into the breadcrumb mixture until evenly covered.

Heat the olive oil in a large skillet over medium heat. Cook the breaded chicken in batches for about 3 minutes per side, until the coating is crisp and golden.

Spread a thin layer of tomato sauce in the baking dish and arrange the browned chicken on top. Spoon over the remaining sauce, then add the mozzarella and the remaining 20 gr Parmesan.

Bake until the sauce is bubbling, the cheese is melted and lightly browned, and the thickest part of each chicken breast reaches 74°C. Rest for 3 minutes before serving.
