Chicken and Vegetable Soup
A comforting broth-based soup with tender chicken thighs, potatoes, carrots, celery, green beans, and peas.
Instructions

Step 1
Heat the olive oil in a stockpot over medium heat. Add the onion, carrots, and celery and cook, stirring occasionally, until beginning to soften.

Add the garlic and dried thyme. Stir until fragrant.

Add the chicken stock, bay leaves, potatoes, and chicken thighs. Bring to a boil over high heat, then reduce to low heat and simmer until the potatoes are tender and the thickest part of each thigh reaches 74°C.

Transfer the cooked chicken to a clean cutting board. Add the green beans to the soup and simmer over low heat until nearly tender.

While the green beans cook, shred the chicken into bite-size pieces using two forks.

Return the shredded chicken to the pot and add the peas. Simmer over low heat until the peas are hot and the chicken is heated through.

Remove the bay leaves. Stir in the salt, black pepper, and parsley, then serve hot.
