Chicken and Spinach Stuffed Peppers
Bell pepper halves filled with seasoned chicken, spinach, rice, tomato sauce, and mozzarella, then baked until tender.
Instructions

Step 1
Preheat the oven to 190°C. Halve the bell peppers lengthwise, remove the seeds and membranes, and arrange the halves cut-side up in the baking dish.

Heat the olive oil in the large skillet over medium heat. Add the onion and cook until softened.

Add the garlic and oregano and stir until fragrant.

Add the chicken, salt, and black pepper. Cook over medium heat, breaking up the chicken, until it is no longer pink.

Add the spinach and cook over medium heat until wilted and excess moisture has evaporated.

Remove the skillet from the heat. Stir in the rice, tomato sauce, and 80 gr of the mozzarella until evenly combined.

Divide the filling among the pepper halves. Pour the water into the bottom of the baking dish, cover tightly with aluminum foil, and bake at 190°C.

Remove the foil and top the peppers with the remaining 40 gr mozzarella. Bake uncovered at 190°C until the peppers are tender, the cheese is melted, and the center of the filling reaches 74°C.
