Chicken and Rice Casserole
A creamy American-style casserole of seasoned chicken thighs and long-grain rice baked together with onion, celery, and a homemade savory sauce.

Step 1
Heat the oven to 190°C. Coat the inside of the baking dish with the olive oil.

Spread the uncooked rice evenly across the bottom of the prepared baking dish.

Melt the butter in the saucepan over medium heat. Add the onion and celery, then cook until softened.

Stir in the garlic, thyme, paprika, black pepper, and 1 tsp (6 gr) of the salt. Cook until fragrant.

Sprinkle in the flour and stir continuously until it evenly coats the vegetables.

Gradually whisk in the chicken broth and milk. Bring the sauce to a gentle simmer over medium heat and cook until slightly thickened.

Pour the hot sauce evenly over the rice and stir gently to distribute the vegetables without disturbing the rice layer excessively.

Season the chicken thighs with the remaining ½ tsp (3 gr) salt, then arrange them in a single layer over the rice mixture.

Cover the baking dish tightly with aluminum foil and bake at 190°C.

Remove the foil and continue baking at 190°C until the rice is tender and the thickest chicken thigh reaches at least 74°C internally.

Rest the casserole, then scatter the parsley over the top before serving.
