Chicken and Cauliflower Rice Stir-Fry
Tender chicken and finely riced cauliflower stir-fried with crisp vegetables in a savory soy, ginger, and sesame sauce.

Step 1
Pulse the cauliflower florets in a food processor until they resemble coarse grains. Avoid processing them into a paste.

Cut the chicken breast into evenly sized bite-size pieces.

Whisk the soy sauce, sesame oil, cornstarch, water, and black pepper until smooth.

Heat half the vegetable oil in the wok over high heat. Add the chicken and stir-fry until browned and its thickest pieces reach 74°C, then transfer it to a clean plate.

Add the remaining vegetable oil to the wok over high heat. Stir-fry the onion, carrot, and bell pepper until crisp-tender.

Add the garlic and ginger and stir until fragrant.

Add the prepared cauliflower rice and stir-fry over high heat until just tender and excess moisture has evaporated.

Reduce to medium heat and return the cooked chicken to the wok. Stir the sauce again, pour it in, and toss until it thickens and coats the stir-fry.

Remove the wok from the heat, scatter the scallions over the stir-fry, and serve.
