Cherry Spoon Sweet
A traditional Greek preserve of whole sour cherries in a glossy, fragrant syrup, served in small spoonfuls with cold water, yogurt, or ice cream.

Step 1
Check the cherries carefully for any remaining pits. Layer the cherries and sugar in the mixing bowl, cover, and refrigerate for 8 hours so the fruit releases its juice.

Transfer the cherries, sugar, and accumulated juice to the saucepan. Add the water and bring to a gentle boil over medium heat, stirring carefully until the sugar dissolves.

Reduce to low heat and simmer gently, removing surface foam with the slotted spoon, until the syrup reaches about 105°C and lightly coats a spoon.

Add the lemon juice and simmer over low heat for 2 minutes, then remove the saucepan from the heat.

Let the cherries cool in the syrup until they reach room temperature.

Transfer the cherries and syrup to clean glass jars, close the lids, and refrigerate.
