Cherry Clafoutis
A classic French baked custard with tender cherries, lightly browned edges, and a delicate dusting of powdered sugar.

Heat the oven to 180°C. Grease the baking dish thoroughly with the softened butter.

Spread the cherries in a single layer in the prepared baking dish.

Whisk the eggs and granulated sugar in a large mixing bowl until smooth and slightly pale.

Whisk in the flour and salt until no dry pockets remain.

Gradually whisk in the milk and vanilla extract to make a smooth, thin batter.

Pour the batter evenly over the cherries. Bake at 180°C until puffed, golden at the edges, and set in the center, 35–40 minutes.

Transfer the baking dish to a cooling rack and let the clafoutis rest for 15 minutes.
