Cherry Clafoutis

A classic French baked custard with sweet cherries, a lightly browned top, and a soft, tender center.

Instructions

  1. Step 1

    Preheat the oven to 190°C.

  2. Step 2

    Grease the inside of the baking dish thoroughly with the softened butter.

    Spread the cherries in a single layer across the prepared dish.

  4. Step 4

    Whisk the eggs, granulated sugar, and salt in the mixing bowl until smooth and slightly pale.

    Timer: 2 min (fixed)

    Ingredients used: 3.0 piece Egg, 0.5 gr Fine Salt, 100.0 gr Granulated Sugar

  5. Step 5

    Add the flour and whisk until no dry pockets remain.

    Ingredients used: 65.0 gr All-Purpose Flour

  6. Step 6

    Gradually whisk in the milk and vanilla extract to make a thin, smooth batter.

    Ingredients used: 5.0 ml Vanilla Extract, 240.0 ml Whole Milk

  7. Step 7

    Pour the batter evenly over the cherries.

  8. Step 8

    Bake at 190°C until puffed and browned around the edges, with a just-set center that reaches at least 74°C.

    Transfer the dish to a wire rack and let the clafoutis rest before serving warm or at room temperature.
