Cauliflower Soup
A smooth, warming cauliflower soup with carrot, potato, tomato paste, garlic, cumin, and a finishing drizzle of foaming butter.
Instructions

Step 1
Prepare the cauliflower, carrot, potato, onion, and garlic as described in the ingredient list.

Combine the olive oil and vegetable oil in a large pot and warm them over medium heat.

Add the onion and carrot. Cook over medium heat, stirring occasionally, until the onion softens.

Stir in the garlic and cook over medium heat until fragrant.

Add the cauliflower and potato. Cook over medium heat, stirring frequently, until the vegetables are lightly coated and beginning to soften.

Stir in the tomato paste, salt, black pepper, cumin, and red pepper flakes. Cook over medium heat until the paste is evenly distributed.

Pour in 900 ml water and bring to a boil over high heat. Partially cover, reduce to low heat, and simmer until the cauliflower and potato are very tender.

Remove the pot from the heat and blend the soup until smooth.

Stir in the remaining 100 ml water. Return the soup to low heat and simmer until evenly heated and slightly thickened.

Melt the butter in a small saucepan over low heat until foaming, then drizzle it over the soup before serving.
