Cauliflower Pizza with Pepperoni
A crisp-edged cauliflower and cheese crust topped with tomato pizza sauce, mozzarella, and pepperoni.
Instructions

Step 1
Heat the oven to 220°C. Line a baking sheet with parchment paper and coat the paper with olive oil.

Pulse the cauliflower in batches until it resembles coarse crumbs.

Transfer the cauliflower to a microwave-safe bowl and microwave until tender.

Let the cauliflower cool until safe to handle, then wrap it in a clean kitchen towel and squeeze out as much liquid as possible.

Combine the squeezed cauliflower with the egg, 50 gr mozzarella, Parmesan, Italian seasoning, garlic powder, and salt.

Press the mixture on the prepared baking sheet into an even 30 cm round about 6 mm thick.

Bake until the crust is deep golden, firm at the center, and reaches at least 74°C internally.

Spread the pizza sauce over the crust, leaving a narrow border. Top with the remaining mozzarella and the pepperoni.

Return the pizza to the oven and bake until the cheese is melted and bubbling. Rest briefly before slicing and serving.
