Cabbage Rolls
Tender cabbage leaves wrapped around a savory beef, pork, and rice filling, then baked in a gently sweet-and-sour tomato sauce.
Instructions

Step 1
Bring a saucepan of water to a boil. Add the rice, parboil until partly tender, then drain well and leave to cool.

Bring a stockpot of water to a boil. Lower in the cored cabbage and remove the outer leaves with tongs as they soften; reserve 12 large leaves and chop the remaining tender cabbage.

Heat the olive oil in a skillet over medium heat. Cook the onion until softened, add the garlic, and cook briefly; transfer the mixture to cool.

Combine the beef, pork, egg, parsley, salt, black pepper, paprika, cooled rice, and cooled onion mixture in a mixing bowl. Mix just until evenly incorporated.

Stir the tomato sauce, tomato paste, beef stock, brown sugar, and red wine vinegar together in a measuring jug.

Heat the oven to 180°C. Spread the chopped cabbage and one-third of the tomato mixture in the baking dish.

Divide the filling among the 12 leaves. Fold the sides over the filling, roll each leaf tightly, and arrange the rolls seam-side down in the baking dish; pour over the remaining tomato mixture and cover.

Bake the covered cabbage rolls at 180°C until the cabbage is tender and the centers reach 74°C.

Uncover and bake until the sauce thickens slightly, then rest the cabbage rolls before serving.
