Cabbage Roll Casserole
A comforting baked casserole of tender cabbage, seasoned ground beef, rice, and a savory tomato sauce, inspired by classic stuffed cabbage rolls.

Step 1
Preheat the oven to 190°C.

Combine the white rice and water with ⅜ tsp (2 gr) salt in the saucepan. Bring to a boil, cover, reduce to low heat, and cook until the water is absorbed; remove from the heat and let stand covered for 5 minutes.

Heat 1 tbsp (15 ml) olive oil in the large skillet over medium heat. Add the cabbage and ½ tsp (3 gr) salt, then cook until wilted and reduced in volume.

Transfer the cabbage to the baking dish. Heat the remaining 1 tbsp (15 ml) olive oil in the skillet over medium heat, then add the beef and onion and cook until the beef is browned and the onion is softened.

Add the garlic, tomato paste, paprika, oregano, and black pepper to the beef. Cook over medium heat, stirring continuously, until fragrant.

Stir in the tomato, beef broth, Worcestershire sauce, brown sugar, bay leaves, and remaining ⅝ tsp (4 gr) salt. Bring to a gentle simmer over medium heat and cook until slightly thickened.

Discard the bay leaves. Fold the cooked rice and beef mixture into the cabbage in the baking dish, spreading everything into an even layer.

Cover the baking dish tightly with aluminum foil and bake at 190°C until bubbling and the center reaches at least 71°C.

Remove the foil and continue baking until the top is lightly browned and the sauce has thickened.

Let the casserole rest before serving.
