Blueberry Almond Muffins

Tender butter muffins filled with blueberries, flavored with almond extract, and topped with sliced almonds.

Instructions

  1. Step 1

    Heat the oven to 190°C and line the muffin tin with paper liners.

    Whisk the flour, baking powder, and salt together.

    Whisk the melted butter and sugar until evenly combined.

    Whisk in the eggs until the mixture is smooth.

    Whisk in the milk and almond extract.

    Add the dry mixture to the wet mixture and fold until only a few flour streaks remain.

  7. Step 7

    Gently fold in the blueberries and 30 piece (30 gr) of the sliced almonds just until evenly distributed.

    Divide the batter evenly among the 12 lined cups and scatter the remaining 15 piece (15 gr) of sliced almonds over the tops.

    Bake at 190°C for 18–22 minutes, until the tops are golden and a tester inserted into the center of a muffin comes out without wet batter.

    Let the muffins cool in the tin for 5 minutes.

    Transfer the muffins to a wire rack and cool for at least 10 minutes before serving.
