Beef Stir-Fry with Broccoli
Tender slices of beef and crisp broccoli coated in a savory soy and oyster sauce.
Instructions

Step 1
Pat the beef dry, then slice it thinly across the grain on a cutting board.

Combine the beef with 1 tbsp (15 ml) soy sauce and 1 ¼ tbsp (10 gr) cornstarch. Set aside to marinate.

Whisk the remaining 3 tbsp soy sauce with the oyster sauce, 4 tbsp (60 ml) water, remaining 1 ¼ tbsp cornstarch, sugar, and sesame oil until smooth.

Heat 1 tbsp (15 ml) vegetable oil in the wok over high heat. Stir-fry the broccoli for 2 minutes, add 4 tbsp (60 ml) water, cover, and cook until bright green and crisp-tender; transfer to a plate.

Return the wok to high heat and add the remaining 1 tbsp (15 ml) vegetable oil. Stir-fry the marinated beef in two batches until browned, transferring each batch to the plate.

Reduce to medium heat. Add the ginger and garlic to the wok and stir until fragrant, then pour in the prepared sauce and bring it to a boil while stirring.

Return the beef and broccoli to the wok. Stir over medium heat until evenly coated, the sauce is glossy, and the beef reaches at least 63°C internally.

Remove the wok from the heat, scatter over the scallions, and rest the stir-fry before serving.
