Beef and Vegetable Kebabs

Tender marinated beef grilled on skewers with bell peppers, red onion, and zucchini in a simple lemon, garlic, and oregano marinade.

Instructions

  1. Step 1

    Whisk the olive oil, lemon juice, garlic, oregano, salt, and black pepper together to make the marinade.

    Ingredients used: 2.0 gr Black Pepper, 2.0 gr Dried Oregano, 12.0 gr Garlic, 30.0 ml Lemon Juice, 60.0 ml Olive Oil, 6.0 gr Salt

    Cookware: mixing bowl, whisk

  2. Step 2

    Add the beef to the marinade and turn until evenly coated. Cover and refrigerate for 30 minutes.

  3. Step 3

    Prepare the bell peppers, red onion, and zucchini as specified.

    Ingredients used: 300.0 gr Bell Pepper, 200.0 gr Red Onion, 250.0 gr Zucchini

  4. Step 4

    Preheat the grill over medium heat.

    Timer: 10 min (fixed)

  5. Step 5

    Remove the beef from the marinade and discard the excess marinade. Thread the beef and prepared vegetables alternately onto the skewers without packing them tightly.

  6. Step 6

    Grill the kebabs for 10–12 minutes, turning every 3 minutes, until the vegetables are tender and the beef reaches at least 63°C internally.

    Transfer the kebabs to a clean platter and rest for 3 minutes before serving.
