Beef and Sweet Potato Stew
A hearty stew of tender beef chuck, sweet potatoes, vegetables, and peas in a savory tomato-enriched beef broth.

Prepare the beef and vegetables as specified. Keep the raw beef separate from the vegetables.

Place the beef in a mixing bowl and coat it evenly with the salt and black pepper.

Heat the vegetable oil in the Dutch oven over medium-high heat. Brown the seasoned beef in batches, then transfer it back to the bowl.

Reduce to medium heat. Add the onion, carrot, and celery, then cook until the onion begins to soften.

Add the garlic, tomato paste, thyme, and flour. Stir until the vegetables are evenly coated and the tomato paste darkens slightly.

Gradually stir in the beef broth, scraping up the browned residue. Add the Worcestershire sauce and bay leaves, return the browned beef and its juices, and bring to a boil; reduce to low heat, cover partially, and simmer until the beef is nearly tender.

Add the sweet potatoes and continue simmering, partially covered, until the beef and sweet potatoes are tender.

Stir in the peas and simmer until heated through. Remove and discard the bay leaves before serving.
