Baked Zucchini and Feta Casserole
A savory baked casserole of well-drained zucchini, feta, eggs, fresh herbs, and breadcrumbs, with a lightly browned feta topping.
Instructions

Step 1
Heat the oven to 190°C. Coat the baking dish with 2 tsp (10 ml) olive oil.

Grate the zucchini, toss it with the salt, and place it in the colander over the mixing bowl. Leave it to drain for 15 minutes.

Squeeze the zucchini firmly by handfuls to remove as much liquid as possible. Empty and dry the mixing bowl.

Heat the remaining 1 ¼ tbsp (20 ml) olive oil in the skillet over medium heat. Add the onion and cook until softened, about 6 minutes.

Add the garlic and cook over medium heat until fragrant, about 1 minute. Remove the skillet from the heat.

Crack the eggs into the mixing bowl and whisk until evenly blended.

Stir the squeezed zucchini, cooked onion mixture, 160 gr feta, breadcrumbs, dill, parsley, and black pepper into the eggs until evenly combined.

Spread the mixture evenly in the prepared baking dish and scatter the remaining 40 gr feta over the top.

Bake at 190°C until the center is set, the top is lightly browned, and the center reaches 74°C, about 35 minutes.

Let the casserole rest for 10 minutes before slicing and serving.
