Almond Orange Cake
A moist, flourless cake made with whole simmered oranges, finely ground almonds, eggs, and sugar.
Instructions

Step 1
Heat the oven to 180°C. Grease the springform pan with butter and line its base with parchment paper.

Place the whole oranges in the saucepan and cover them with water. Bring to a boil over high heat, then reduce to low heat and simmer until very tender.

Drain the oranges and let them cool. Cut them into pieces, discard any seeds, and process the peel and flesh into a smooth puree.

Whisk the ground almonds, baking powder, and salt together in a mixing bowl.

In a separate mixing bowl, whisk the eggs and sugar until pale, thickened, and slightly foamy.

Fold the orange puree into the egg mixture. Fold in the prepared almond mixture just until evenly combined.

Spread the batter in the prepared pan and bake at 180°C until deeply golden, set in the center, and a tester comes out without wet batter.

Cool the cake in its pan on a wire rack for 20 minutes. Release the pan and let the cake cool completely before slicing.
