Vegetarian Lasagna with Spinach
Layers of pasta with spinach, ricotta, and marinara sauce. A hearty and satisfying vegetarian main course.
Instructions

Step 1
Preheat the oven to 190°C. Bring water to a boil in the pot over high heat, then add salt.

Add the lasagna noodle to the boiling pot and cook until just tender but still firm, then drain thoroughly in the colander.

In the mixing bowl, combine the thawed spinach squeezed very dry, drained ricotta cheese, garlic, and the remaining salt until evenly mixed and creamy.

Coat the inside of one 20-by-30-centimeter baking dish with olive oil, using the spatula to spread it evenly.

Taste the marinara sauce before layering and do not add more salt; divide the cooked noodles into three equal portions and the filling into two equal portions.

Spread 150.0 ml marinara sauce in the baking dish, cover with one third of the noodles, then spread one half of the filling over them. Add 200.0 ml marinara sauce and 60.0 gr mozzarella cheese.

Add the second third of the noodles, spread the remaining filling over them, then add 200.0 ml marinara sauce and 60.0 gr mozzarella cheese.

Cover with the remaining third of the noodles, spread 150.0 ml marinara sauce over the top, and finish with 130.0 gr mozzarella cheese.

Bake the assembled lasagna in the 190°C oven until the sauce bubbles at the edges and the mozzarella cheese is fully melted with light golden spots.

Let the lasagna rest in the baking dish until the layers set and it can be cut cleanly.
