Vegetable Sushi Rolls
Sushi rolls filled with assorted vegetables and served with soy sauce. A fresh and light meal option.
Instructions

Step 1
Rinse the sushi rice in the fine-mesh strainer until the water runs mostly clear, then drain well.

Put the drained sushi rice and water in the saucepan. Bring to a boil over high heat, then cover, reduce to low heat, and cook until the water is absorbed and the rice is tender.

While the rice cooks, use the vegetable peeler to peel the carrot, then use the chef's knife to cut the cucumber and carrot into thin matchsticks and the peeled, pitted avocado into thin strips on the cutting board.

Remove the saucepan from the heat and let the rice stand covered until the grains finish steaming and look glossy.

In the mixing bowl, stir together the rice vinegar, sugar, and salt with the rice paddle until dissolved. Transfer in the cooked rice and fold gently, spreading it against the bowl sides until no longer steaming and warm to room temperature.

Place 1 nori sheet on the bamboo sushi mat and spread one-quarter of the seasoned rice over it, leaving a narrow edge bare. Arrange one-quarter each of the cucumber, avocado, and carrot in a line across the rice, then roll firmly and seal the bare edge; repeat for 4 rolls.

Place the rolls on the cutting board and slice each into even pieces with the chef's knife. Serve the rolls with soy sauce for dipping.
