Vegan Za'atar Flatbread
Soft, chewy Middle Eastern flatbreads topped with a savory mixture of za'atar and olive oil.

Combine the flour, yeast, sugar, and salt in a large mixing bowl.

Add the water at about 38°C and 1 tbsp (15 ml) of the olive oil. Stir until a rough dough forms.

Knead the dough in the bowl or on a clean work surface until smooth and elastic.

Return the dough to the bowl, cover it, and let it rise until roughly doubled in size.

Preheat the oven to 230°C. Line a baking sheet with parchment paper.

Mix the za'atar with the remaining 2 tbsp (30 ml) olive oil to make a spreadable paste.

Divide the risen dough into 4 equal pieces. Roll each piece into a round about 5 mm thick and arrange on the lined baking sheet.

Spread the za'atar paste evenly over the rounds, leaving a narrow border around each edge.

Bake at 230°C until the edges are lightly browned and the centers are cooked through.
