Koulouri with Sesame
Greek-style bread rings with a chewy crumb, crisp crust, and generous sesame coating.
Instructions

Step 1
Combine the bread flour, instant yeast, granulated sugar, and fine salt in a large mixing bowl.

Add 1 ¼ cup (300 ml) of the water and the olive oil. Mix until no dry flour remains and a rough dough forms.

Knead the dough on a clean surface until smooth and elastic.

Return the dough to the mixing bowl, cover with a clean kitchen towel, and leave it to rise until roughly doubled in size.

Heat the oven to 220°C. Line a baking sheet with parchment paper.

Divide the risen dough into 8 equal portions. Roll each portion into a rope about 45 cm long, join the ends, and press firmly to form a ring.

Pour the remaining ½ cup (100 ml) water into a small bowl and spread the sesame seeds in a shallow dish. Dip each ring in the water, coat it generously with sesame seeds, and arrange it on the prepared baking sheet; cover and rest.

Bake at 220°C until the rings are deeply golden and sound hollow when tapped underneath.

Transfer the koulouri to a wire rack and cool for at least 10 minutes before serving.
