Turkish Red Lentil Börek
A crustless Turkish-style savory bake made with tender red lentils, white cheese, yogurt, eggs, fresh herbs, and a seed-topped golden crust.

Heat the oven to 180°C.

Grease the baking dish evenly with 4 gr of the butter.

Rinse the red lentils under cool running water, then drain well.

Combine the rinsed lentils and water in the saucepan. Bring to a boil over high heat, then reduce to low heat and cook, stirring occasionally, until the lentils are tender and the water is absorbed.

Remove the saucepan from the heat and stir the remaining 10 gr butter into the hot lentils until melted.

Transfer the lentils to the large mixing bowl and let them cool until warm rather than steaming.

Slice the green onions and finely chop the parsley and dill.

Whisk the eggs, yogurt, salt, and black pepper together until smooth.

Fold the egg mixture, chopped greens, and crumbled white cheese into the cooled lentils until evenly distributed.

Spread the mixture evenly in the prepared baking dish, then scatter the nigella and sesame seeds over the surface.

Bake at 180°C until the center is set, the top is golden, and the interior reaches 74°C.
