Turkish Cauliflower Gratin
Tender cauliflower and sautéed carrot and onion baked in a lightly seasoned egg-and-milk batter, then finished with browned kaşar cheese.
Instructions
-
Step 1
Heat the oven to 180°C. Brush the baking dish with 5 ml vegetable oil.
-
Step 2
Remove the cauliflower leaves and tough stem, then divide the head into evenly sized florets.
-
Step 3
Bring a large saucepan of water to a boil over high heat. Add the cauliflower, return to a boil, and cook over medium heat until just tender when pierced but not falling apart.
-
Step 4
Drain the cauliflower thoroughly, let it steam-dry briefly, and spread it evenly in the prepared baking dish.
-
Step 5
Peel and coarsely grate the carrots, then finely chop the onion.
-
Step 6
Heat 10 ml vegetable oil in a skillet over medium heat. Cook the prepared carrot and onion, stirring occasionally, until softened and lightly golden.
-
Step 7
Whisk the eggs, milk, 10 ml vegetable oil, flour, parsley, salt, red pepper flakes, black pepper, and baking powder until no dry flour remains.
-
Step 8
Spread the sautéed vegetables over the cauliflower. Pour the egg mixture evenly over the dish, allowing it to settle between the florets.
-
Step 9
Bake at 180°C until the center is set and reaches 74°C.
-
Step 10
Grate the kaşar cheese, scatter it over the gratin, and bake at 180°C until melted and lightly browned.
