Turkish Apple Roll Cake
A thin banana-enriched sponge baked over a cinnamon-walnut apple layer, then inverted and rolled while warm.
Instructions

Step 1
Heat the oven to 180°C. Line the entire baking sheet with parchment paper, including the corners.

Peel and core the apples, then grate them through the large holes of a box grater.

Place the grated apples and 35 gr granulated sugar in the frying pan. Cook over medium heat, stirring frequently, until the released juice has mostly evaporated.

Finely chop the walnuts. Remove the apples from the heat and stir in the walnuts and cinnamon.

Spread the apple filling evenly across the lined baking sheet, reaching close to every edge.

Mash the banana in a small bowl until mostly smooth.

Beat the eggs with the remaining 170 gr granulated sugar in a large bowl until pale, thick, and slightly increased in volume.

Mix the mashed banana, sunflower oil, and milk into the egg mixture until evenly combined.

Add the flour, baking powder, and vanilla. Mix on low speed only until no dry flour remains, then scrape the bowl once with a spatula.

Pour the batter over the apple filling and gently spread it into an even layer without disturbing the apples underneath.

Bake at 180°C until the sponge is lightly golden and springs back when gently pressed in the center.

Lay a fresh sheet of parchment paper on the work surface and dust it evenly with the powdered sugar.

While the cake is still warm, invert it onto the sugared parchment so the apple layer faces upward. Carefully peel away the parchment used for baking.

Starting at a short edge, use the lower parchment to guide the warm cake into a snug roll without wrapping the paper inside it.

Let the rolled cake cool seam-side down, then cut it into 10 slices for serving.
