A chilled Mexican-style shrimp cocktail with tomato-lime sauce, crisp vegetables, cilantro, and creamy avocado.

Instructions

  1. Step 1

    Combine 2 cup (500 ml) of the water with the ice in a large mixing bowl.

  2. Step 2

    Combine the remaining 1,500 ml water with 1 ¼ tsp (8 gr) salt in a saucepan and bring to a boil over high heat.

  3. Step 3

    Reduce to medium heat, add the shrimp, and poach until opaque and their centers reach 63°C.

    Timer: 3 min (fixed)

  4. Step 4

    Transfer the shrimp immediately to the ice bath. Chill, then drain thoroughly in a colander.

  5. Step 5

    Whisk the tomato juice, ketchup, lime juice, hot sauce, remaining ⅝ tsp (4 gr) salt, and black pepper in a medium mixing bowl.

    Ingredients used: 1.0 gr Black Pepper, 15.0 ml Hot Sauce, 120.0 ml Ketchup, 60.0 ml Lime Juice, 4.0 gr Salt, 240.0 ml Tomato Juice

  6. Step 6

    Fold the red onion, cucumber, tomato, cilantro, and chilled shrimp into the sauce. Cover and refrigerate until cold.

  7. Step 7

    Gently fold in the avocado and divide the cocktail among serving bowls.
