Serbian White Bean Stew
A hearty stovetop stew of tender white beans, smoked pork sausage, vegetables, sweet paprika, and a light paprika roux.

Step 1
Rinse the beans, place them in a large bowl with 6 ¼ cup (1500 ml) water, and soak at room temperature for 8 hours.

Drain and rinse the soaked beans. Put them in the stockpot with 7 ½ cup (1800 ml) fresh water and the bay leaves; bring to a full boil over high heat and boil uncovered for 10 minutes.

Reduce to low heat, partially cover, and simmer until the beans are beginning to soften but remain intact.

Heat 2 tbsp (30 ml) sunflower oil in a frying pan over medium heat. Add the onion and carrot and cook until softened and lightly golden.

Add the garlic to the vegetables and cook until fragrant.

Add the sautéed vegetables and smoked sausage to the beans. Simmer partially covered over low heat until the beans are fully tender.

Heat the remaining 1 ¼ tbsp (20 ml) sunflower oil in the frying pan over medium heat. Stir in the flour and cook until smooth and pale golden.

Remove the pan from the heat and stir in the paprika. Gradually mix in a ladleful of hot bean-cooking liquid to make a smooth slurry.

Stir the paprika slurry, salt, and black pepper into the stew. Simmer uncovered over low heat until slightly thickened.

Remove the bay leaves, stir in the parsley, and serve the stew hot.
