Roasted Chicken with Garlic and Rosemary

A whole chicken roasted with garlic, fresh rosemary, lemon, and olive oil until crisp-skinned and juicy.

Instructions

    Preheat the oven to 200°C and set a roasting pan nearby.

    Combine the garlic, rosemary, olive oil, salt, and black pepper in a small bowl.

    Ingredients used: 2.0 gr Black Pepper, 12.0 gr Fine Salt, 24.0 gr Garlic, 30.0 ml Olive Oil, 6.0 gr Rosemary

    Pat the chicken dry and place it breast-side up in the roasting pan. Put the lemon halves in the cavity, then rub the prepared garlic-rosemary mixture over the chicken and beneath the breast skin where accessible.

    Roast the chicken at 200°C until deeply browned and nearly cooked through.

    Check the thickest part of the breast and the inner thigh without touching bone. Continue roasting until both areas reach at least 74°C.
