Revani Semolina Cake
A tender Turkish-style yogurt and semolina cake soaked with fragrant lemon syrup and finished with chopped pistachios.
Instructions

Step 1
Combine 2 cup (400 gr) sugar with the water in a saucepan. Bring to a boil over medium heat, then reduce to low heat and simmer gently.

Stir in the lemon juice and simmer briefly. Remove the syrup from the heat and leave it to cool.

Preheat the oven to 180°C. Grease the baking dish evenly with the butter.

Whisk the eggs with the remaining ¾ cup (150 gr) sugar until pale, thick, and slightly foamy.

Whisk the yogurt, vegetable oil, and vanilla extract into the egg mixture until smooth.

In a separate bowl, combine the semolina, wheat flour, baking powder, and salt.

Fold the dry mixture into the wet mixture just until no dry patches remain. Spread the batter evenly in the prepared baking dish.

Bake at 180°C until deeply golden and a knife inserted in the center comes out without wet batter.

Set the baking dish on a wire rack and rest briefly. Cut the warm cake into 12 squares or diamond-shaped portions.

Slowly pour the cooled syrup over the warm cake, allowing each addition to soak in. Leave the cake undisturbed until the syrup is absorbed.

Scatter the pistachios over the soaked cake and serve at room temperature or chilled.
