Pork Tenderloin with Apples
Seared pork tenderloins roasted with sweet-tart apples and finished with a savory apple-cider and Dijon pan sauce.

Preheat the oven to 200°C.

Season the pork tenderloins evenly with the salt and black pepper.

Heat the olive oil in the ovenproof skillet over medium heat. Sear the pork, turning with tongs, until browned on all sides.

Transfer the seared pork to a clean plate.

Add the butter, apples, and onion to the skillet. Cook over medium heat, stirring occasionally, until the onion softens and the apples begin to brown.

Add the garlic and thyme and cook over medium heat until fragrant.

Pour in the apple cider and chicken stock, then stir in the Dijon mustard. Scrape the browned residue from the skillet and bring the sauce to a simmer over medium heat.

Return the pork and any accumulated juices to the skillet. Transfer the skillet to the oven and roast until each tenderloin reaches at least 63°C at its thickest point.

Transfer the pork to a clean cutting board and rest it before slicing.

Meanwhile, simmer the apple mixture over medium heat until the sauce lightly coats a spoon.
