Pork Chops with Mushroom Gravy
Pan-seared pork chops finished in a savory mushroom, onion, and cream gravy.
Instructions

Step 1
Season the pork chops evenly with ⅝ tsp (4 gr) salt and ½ tsp (1 gr) ground black pepper.

Place 2 ¾ tbsp (20 gr) flour in a shallow dish and dust both sides of the seasoned chops evenly.

Heat the vegetable oil in a large skillet over medium heat. Sear the chops until browned on both sides, then transfer them to a plate.

Add the butter, mushrooms, and onion to the skillet. Cook over medium heat until the vegetables soften and the mushrooms begin to brown.

Add the garlic and thyme and cook over medium heat until fragrant.

Sprinkle the remaining 1 ¼ tbsp (10 gr) flour over the vegetables and stir until no dry flour remains.

Gradually whisk in the chicken stock, then add the Worcestershire sauce. Bring the gravy to a gentle simmer over medium heat and cook until it begins to thicken.

Stir in the cream, the remaining ⅜ tsp (2 gr) salt, and the remaining ½ tsp (1 gr) ground black pepper. Simmer over low heat until the gravy is smooth and lightly thickened.

Return the chops and any collected juices to the skillet. Simmer gently over low heat until the centers reach at least 63°C, then remove from the heat and rest for 3 minutes before serving.
