Pork Chops with Apple Cider Glaze
Pan-seared bone-in pork chops finished in the oven and served with a savory-sweet apple cider pan glaze.
Instructions

Step 1
Heat the oven to 200°C. Pat the pork chops dry, then season both sides with the salt and black pepper.

Heat the oil in the oven-safe skillet over medium-high heat. Sear the pork chops until deeply browned, about 3 minutes per side.

Transfer the skillet to the oven. Roast until the thickest part of each chop reaches 63°C, about 6–10 minutes.

Move the pork chops to a plate and let them rest for 5 minutes while making the glaze.

Return the skillet to medium heat. Add the shallot and cook for 2 minutes, then add the garlic and cook for 30 seconds.

Add the apple cider, chicken stock, apple cider vinegar, Dijon mustard, brown sugar, and thyme. Whisk while scraping up the browned bits, then simmer over medium heat until reduced to a glossy glaze.

Remove the skillet from the heat and whisk in the cold butter until the glaze is smooth and shiny.

Spoon the apple cider glaze over the rested pork chops and serve immediately.
