Pork and Vegetable Stir-Fry
Thin slices of pork and crisp vegetables tossed in a savory soy-ginger stir-fry sauce.
Instructions

Step 1
Prepare the broccoli, bell pepper, carrots, onion, garlic, ginger, and green onions as noted in the ingredient list. Keep the green onions separate.

Slice the pork as noted, using a clean cutting board and knife after the vegetables have been prepared.

Whisk the soy sauce, water, rice vinegar, brown sugar, cornstarch, and sesame oil until smooth.

Place the sliced pork in a mixing bowl and toss with the black pepper.

Heat a wok over high heat. Add 1 tbsp (15 ml) vegetable oil, then stir-fry the pork until browned and nearly cooked through, about 4 minutes; transfer it to the clean mixing bowl.

Add the remaining 1 tbsp (15 ml) vegetable oil to the wok. Stir-fry the onion and carrots over high heat for 2 minutes.

Add the broccoli and bell pepper and continue stir-frying until bright and crisp-tender, about 3 minutes.

Add the garlic and ginger and stir-fry for 30 seconds, just until fragrant.

Return the pork to the wok, whisk the prepared sauce, and pour it in. Toss over medium heat until the sauce boils and thickens and the pork reaches at least 63°C, about 2 minutes.

Remove the wok from the heat, fold in the green onions, and let the stir-fry stand for 3 minutes before serving.
